Green Tomato Fritters


 Does anything say "Summer" better than tomatoes from your garden?


The plants I purchased this year started producing when they were surprisingly small.  Wanting them to be more robust, many green tomatoes have been harvested.  Here's my recipe for a quick, delicious summertime side dish, using my air fryer.  If air fryers aren't you, a skillet works well, too!  You'll need more cooking oil.


Green Tomato Fritters

4 cups Coarsely Chopped Green Tomatoes

1/4 cup Yellow Corn Meal

1/4 cup Self Rising Flour

1 Egg

1 - 2 tablespoons Water

1 teaspoon Cajun Spices

Salt to taste

1 tablespoon Cooking Oil for Air Fryer

Prepare a liner for Air Fryer using parchment paper.  Remove liner and pre-heat air fryer.  Mix everything together except the green tomatoes and oil.  Blend batter until well combined and all lumps are gone.  Add Green Tomatoes, gently stir, making sure all pieces are coated.

Add oil to pre heated air fryer and place the liner into the basket.  Dump entire green tomato mixture into air fryer.  Cook on french fry setting, flipping halfway thru cooking time.  Once done, it will be crispy on the edges and soft in the middle.  Break the block into bite size pieces.
