Lemon Herb Infused Vinegar


For gardeners, Summer months are the best months, enjoying harvests and experimenting with new recipes.



Thanks to reading the entire China Bayles series by Susan Wittig Albert during winter, lots of new to me herbal ideas have been crossing my radar.  I love how her books include recipes and crafts!  Through a bit of trial and error, I've found a vinegar blend that I love using!


Lemon Herb Infused Vinegar

5 sprigs Lemon Balm

3 sprigs Thyme

1 Lemon Wedge

1/2 cup White Wine Vinegar

Rinse herbs, remove any brown or damaged leaves.  Dry thoroughly.  Place herbs with lemon wedge in pint jar, cover with vinegar.  Place in cool dry location, for about two weeks, shaking daily.  Strain and re bottle vinegar in clean jar.

This has been such a delicious treat.  It has found its way into all kinds of things, which of course will be revealed soon!
